THAI COTTAGE
Originally a fish & chip shop with a few ancilliary tables, our brief here was to maximise the proposed restaurant seating area. The existing condition and layout of the ground floor was such that a view was taken to completely strip out the whole ground floor area including all existing cooking / ancilliary equipment / services etc to cater purely for restaurant seating.

With the aforementioned in mind draught plans were drawn up and submitted to the Local Authority Planning Department to construct a small ground floor extension to the rear of the property to house completely bespoke state of the art kitchen facilities.

The existing entrance to the residential units above the proposed restaurant initially descended into the back yard. As a matter of necessity we managed to create a flat roof kitchen extension to allow occupants access to their units above and in so doing provided them with a very useful roof terrace. The brickwork extention was designed and constructed to an exemplary standard, including for lime mortar and vernacular building materials satisfying the most stringent of Conservation Officers. A much more compact external stairway was designed at the rear of the kitchen extension to maximise use of the limited site footprint.

With a view to minimising expenditure on the floor structure within the existing building, our proposals included for modifying the existing changes of floor level to suit our new raised seating areas to maximise covers whilst maintaining an exquisite and spacious ambiance.

Dining in true Thai authenticity is paramount to the design ethos eminating from our initial brief and to this end much of the traditional teak panelling / balustrading was manufactured & constructed in Thailand and shipped over together with all the teak flooring and Thai bric-a-brac display artifacts.
